Come the first of the year I start a weight loss challenge with some friends and family -- I am not pregnant and I am determined to lose some of this weight BEFORE I get pregnant again. I want someone to know I am pregnant at 6 months (or even 9 months for that matter) not just think I am really fat!
Breakfasts this week will include: Cereal, Toast, Waffles, French Toast
Sunday - Grilled Cheese and Chicken Noodle Soup
Monday - Jambalaya (I know I was going to save this for the missionaries who are coming on Saturday - but Adam wants to have Taco's when they come).
Tuesday - Mimi's Cafe (received a gift card for here on Christmas) We have other errands to run right near here this day also.
Wednesday - Leftover Jambalaya
Thursday - Turkey Enchiladas with Mexican Cesar Salad
I will make the following modifications to that recipe:
-corn tortillas instead of flour
-no chili beans -- will use pinto beans (not sure if they are the same or not!)
---These I made the beginning of December and put into the freezer---
Friday - Grilled Chicken Mexican Cesar Salad -- dressing recipe (Cilantro Pepita) is here
Saturday - Tacos

We are going to disneyworld in March. We are so excited! Do you guys go often? This will be our second trip. We gave it to thekids for Christmas! Have fun!

Kidney beans are rich in fiber, iron and protein. Beans of all sorts can be a key ingrediant in meatless meals. They are also a source of potassium and magnesium as well as folate.(good for the brain) Beans of all types (black, pinto an navy) are nutritionally similar. Kidney beans have the most protein and fiber with the fewest calories. Pintos are tops in folate. Cook your own to avoid salt in canned beans. This is from a health letter I get. The best foods are acorn squash, almonds, apples, apricots,asparagus, bananas, barley, (not pearl),blueberries, bran flakes, broccoli, brown rice, brussel sprouts, canola oil cantaloupe, carrots, cauliflower, chicken breast, cranberry juice, kale,kidney beans,milk,oatmeal,okra,oranges,peaches,peanut butter, popcorn, pork loin, prunes, romaine salmon, shredded wheat,,spinach,sweer pot, tofu, tomatoes, tuna, turkey breast, walnuts watermelon whole grain bread & pasta, yogurt.
