February already. I know you are thinking you say that everytime it is a new month! Well it is true how did this past month go by so fast?
Sunday - Porcupine Meatballs (we ate at Paw's house and this is not his recipe but when I make them this is how)
Monday - Chicken in creamy pan sauce (new recipe if good will post the recipe here as well - I found it here at Frugal & Fabulous). Wild rice and salad? or frozen veggies.
Wednesday - Ground Beef Tacos
Thursday - ????
Friday - Salsa Chicken
Saturday - Ribs, potatoes and veggies
Now a little reflection on last week:

Sunday - Spaghetti at Mom's
Monday - Little Manuel's (using a Restaurant.com certificate)
Tuesday - Navy Bean soup (with Ham) ... basically just took the beans (after soaking for 24 hours... as I got busy and forgot) and put in the crockpot with the ham (had been frozen about 10 months) cut into pieces I did not have any fresh root veggies to add except celery. But when going through the spice cabinet to find the bay leaves I found some Dried Vegetables and Dried Onion ... it worked out great! The soup was FABULOUS, even the kids ate it! I also added chicken soup base to the water for more flavor. Made a huge crock pot full and now we have leftovers in the freezer for a quick meal.
Wednesday - Tortalini with Marinara sauce (Trader Joes and Ragu!)
Thursday - Meatballs and gravy with Mashed Potatoes and Peas & Carrots Ordered Pizza and went to a friends house.
Friday - Chicken and Sausage Jambalaya (Zataran's Rice mix - with an extra cup of rice and two cups of water) Meatballs and gravy with Mashed Potatoes and Peas & Carrots (just a day late)
Saturday - BBQ??? (Saturday is just sounding so far away right now! I have to work so we may do a BBQ around lunch time before I leave). Then dinner would be leftovers. Leftovers (lunch) and we had a coupon for a free pizza so used that for dinner - well Adam and the girls - I had to work.
Oh yeah our goals for 2010 have yet to be posted but they are almost done!

1 lb ground beef
½ cup rice
½ cup chopped onion
1 egg
1 tsp chili powder
A few shakes of onion powder
Salt & pepper
8 oz tomato sauce
8 oz water
Mix meat, rice, onion, egg, chili powder, onion powder, and salt & pepper together in a medium bowl. Form meat mixture into meatballs (I make them about golf ball size). Brown meatballs on all sides then pour tomato sauce over the tops. Add 8 oz of water to the pan, cover, and simmer on medium-low for 30-35 minutes.
Disneyland threw us off. I think we are getting back on track. While we did not have a menu on the blog last week we had one in our head - and did a pretty good job of following that (meaning no eating out!)
