Menu Plan Monday - Jan. 4th

Well last week went pretty well and we kept on track. One of our goals for 2009 (which I think should be pretty easy) is to keep our out to eat spending at $125. I would like that $125 to include what Adam spends at work. He does try to take his lunch but as a foreman he often gets asked to go to the cafeteria for lunch and I guess it is not "cool" to bring something! Sometimes he gets a free lunch and others he has to pay for the both of them. We discussed and set a goal for him of $30 a month, he said he would try. My other problem is vacations. When on vacation we will usually end up spending more than this if the vacation is a week so we will have to try to balance things out. We go to Disneyland soon and plan on cooking a few meals at our place but undoubtedly we will eat out 7 times throughout the week (at least one meal probably each day).

Anyway on to this weeks menu (during the week lunch is usually leftovers)

Sunday
B: Cereal
L: Pot Roast (our church is now at 1pm) so we had lunch before we went
D: Meatloaf, Mashed Potatoes and Green Beans (at his moms)

Monday
B: Steel Cut Oatmeal
D: Pasta Fagoli Soup with Salad (pictures posted previously with soup)

Tuesday
B: French Toast with blueberries (both in the freezer)
D: Pork Ribs, rice-a-roni (still have a few boxed things laying around we need to eat), with broccoli and salad

Wednesday
B: Cereal
D: Ham (leftover from Christmas -- in freezer) and scalloped potatoes (still looking for a good recipe - if you have one point me in the right direction - low cal would be great - if there is such a thing) with salad

Thursday
B: Cereal bar (we have a doctors appointment for Rachel early)
D: Veggie Crock Soup with bread

Friday
B: Toast and fruit
D: Baked Potato with chili (the same one we always have)

Snacks this week will include: Carrot sticks, celery, crackers with a slice of cheese, the little bit left of Crispex mix that we made up a few weeks ago, apples, bananas, oranges and grapes.

I also plan on making some muffins - zucchini carrot, just have not found the recipe.
