Ingredients
1 (15oz) can of black beans, rinsed
1(15 oz) can of black eyed peas
1 (17 oz) can whole kernel corn, drained or a 16oz bad of frozen corn I hate frozen corn!
2 large tomatoes, chopped
1 large avocado, diced
1/2 red onion, chopped
1/4 cup chopped fresh cilantro
Dressing
1 Tbsp red wine vinegar
3-4 Tbsp lime juice (about 2 limes)
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
1/2 tsp cumin
1/2 tsp chili powder (used slightly less)
Directions
1. Combine all ingredients in bowl. For me I did all the top (except avocado - which I just had on top - so it wouldn't brown) and then did the dressing separate. When I do each serving I put the dressing on then.
2. Cover and chill.
3. Garnish with avocado slices and cilantro sprigs.
3. Serve with tortilla chips - most I ate with a spoon and then had an occasional chip.
I forgot to take a picture today when I made it but when I make another bowl tomorrow I will try to take one and edit this post with it.
