Menu Plan Monday



Well this week should be much better than last weeks menu of .... leftovers and more leftovers!



Breakfasts - Oatmeal, Cold Cereal, Cinnamon Rolls (the frozen ones I made up last week), Cereal Bars (just the ones from Trader Joes)

Monday (lunch) - Meatloaf patty (I make these ahead, cook and then freeze - makes for a QUICK meal), with some frozen rice and brown gravy.

Monday (dinner) - BLT's, potato salad, lettuce salad

Tuesday - Pasta Lasagna We are out in the freezer so I will be making 4 or so of these up and putting the extras in the freezer. Then I just have to pull it out and bake it as it gets closer to the holidays. I will also make some rolls (recipe below).

Wednesday - Chili (Wendy's Copy Cat) this is frozen (made it a few weeks ago, just need to pull out and heat up) and Cornbread I make the cornbread into muffins so the leftovers can be frozen.

Thursday - Full feast at my in-laws. I am bringing Sweet Potato Casserole (watch for some pictures later this week)

Friday - Full feast at our house with my family.

Saturday - Thanksgiving Feast leftovers (probably just a complete repeat - but watch for a list later this week of different things to cook with your leftover turkey!!)

Sunday - Turkey & Gravy over Rice


Janelle sent me this recipe, they were VERY easy. I used my Kitchen Aid and then put them on a cookie sheet, put into the oven then turned on to 150 for about 10 min - they rose beautifully then changed the temp to 350.

What she sent in (_) are the prices she listed.

These rolls are made in my bread machine on the dough cycle, but if you don't have a machine, you could make them by hand, using warm water to dissolve the yeast and then kneading the dough till it's smooth and elastic.

1 1/4 c. water (0)
3 T. vegetable oil (about .10)
3 T. honey (.36)
1 t. salt (negligible)
3 1/2 c. flour (.35) ----- I used 1 1/2 c wheat flour and 2 cups all purpose
2 t. yeast (I buy in bulk, so this is negligible, too)

Total cost of 2 dozen round rolls, or a very large loaf - about 85 cents, and they are GOOD!!!

Mine only made about 12 rolls but they were big - we ate every last one of them, not that night but over the next 2-3 days!
