Menu Plan Monday - Dec. 1st

Breakfasts - Cereal, Oatmeal, Muffins, Pancakes, French Toast

Lunches - Leftovers from dinner the night before and one day we will have Costco dog after picking up a few things and pictures. I can actually get out of Costco for only about $50!

Dinners (after having Turkey on Thursday and again a new Turkey meal on Friday... we are getting sick of it but as you can see from this weeks menu -- were having it just about all week. I am trying to make it as not Turkey like as possible though.

Sunday - Turkey leftovers

Monday - Turkey & Rice Soup -- just going to take the dark meat turkey and the broth I already made add to it some fresh carrots, celery, onion and frozen peas. Possibly a can of diced potatoes. Then some cooked brown rice. I will make up a big batch of rice and freeze some in quart size ziplocs flattened out for when I need it and am in a rush.

Tuesday - Jambalaya with turkey & sausage -- I use the boxed Zatarain's mix with an extra cup of rice to tone down the spice and make it go farther.

Wednesday - Turkey Enchiladas
I will make the following modifications to that recipe:
-corn tortillas instead of flour
-no chili beans -- will use pinto beans (not sure if they are the same or not!)

I will make about 3 of these (two for the freezer for another time. These will be made in some pie pans I have.

This day I am also going to make Turkey Pot Pie (check out Works for me Wednesday later this week) to add to the freezer.

Thursday - Chicken tenders (frozen from Costco -- not that great but want to use them up) with fries from Trader Joe's

Friday - Leftovers (probably Jambalaya)

Saturday - Meat Pies (we make them one saturday each December with the entire family. Then have them on Christmas Eve for dinner). Will get the recipe we use and post later.
