04.18.10 menu plan

What a week this past week (well 10 days) has been! I am going to try to get a menu planned for this week though.  I went to Raley's on Saturday and happened to see they had boneless skinless chicken for 99 cents a pound (sell by the 18th) so I grabbed 4 packages... don't ask why so many!  So Saturday night we made up some homemade chicken nuggets... they were SO good!   So the menu for this week is a bit chicken heavy!

For breakfast either cold cereal or Steel Cut Oatmeal.

Sunday - Roast with baked potatoes and salad (at mom's)

Monday - BBQ chicken with corn on the cob (fresh already!) and Candied Walnut Salad

Tuesday - Fruited Curry Chicken Salad and then leftover bbq chicken for Rachel

Wednesday - Chicken Enchilada Casserole  to save time. If I get ambitious I may to regular enchiladas but why? This is so much easier and the end result always seems to be the same!

Thursday - Southwestern chicken salad with a lime dressing (recipe will be posted sometime!)  This will use the left over BBQ chicken.

Friday - Pizza with chicken on it! Here is the recipe for the pizza sauce.  Usually we have other toppings like pepperoni, ground beef, olives to put on top but with all the chicken that we have right now I thought this might be better.  For this I might even make a white or pesto sauce for it!

Saturday - at a friends for dinner
