Pantry Challenge {the month}

I posted yesterday about our goals for the Pantry Challenge we are doing.  Today we are going to look at our goals and see how we did.

1) Use the items that have not been rotated in the pantry for sometime.

We were successful in using many items from the pantry – opened things we tend to “save” like juice, it is just there – for “special” occasions!  Well we decided this month would be a special occasion.
We used some of those specialty items that I purchased for a great recipe I saw and then never got around to making – we made them this month (well a couple of them).  They were not really that good – the people who work at Trader Joe’s and create the sample recipes made them taste much better!
We started turning to canned fruits and vegetables more as the month went on (although see #3).
A few more items remain in the pantry that we want to use – we plan on using them and being more attentive to what it is we are buying.

2) Discover what exactly is in our freezer and use it.

We have cleaned out both freezers – but they are NOT even close to being empty – not that I want them to be empty. I just want to use the older items that we put off using.

Here is a picture of the freezer I took last week:

We have used a little more since these pictures but there is still TONS in there.  I have discovered I need to store more bread – or as you will read in #4 make it. Otherwise we have a pretty good supply of a variety of products in the freezer.

3) Reduce grocery budget – really I wanted to not go shopping at ALL, but wanted a little wiggle room.

We spent MAYBE $100 all month at the store. This included three trips. All three were a result of really good sale items that I wanted to get and put away for “after” the challenge.  You know the $5 off $20 coupons or the $10 off $50… yeah I am a sucker! We did buy milk, fruits and veggies around the 20th.  We were doing find drinking the THRIVE Instant Milk (it is actually REALLY good) but I had been wanting to make a permanent switch to 1/2 instant and 1/2 fresh milk for awhile anyway so the gallon of milk we got I split up and froze one gallon and then we had the other 1/2 (turned whole gallon) in the fridge. No one knew the difference so looks like that is a switch we will continue with.

I definitely learned I need more raw vegetables around. We did use the THRIVE vegetables with our meals and as side dishes but they are just not a good substitute for a salad!

We also went into Costco to get puppy food this past weekend as we were near there. We had enough to get through the month but it has made me realize we need to have a bigger supply of food for her around too.

4) Teach the kids more out eating from the pantry and making things here at home (crackers, bread, etc.)

This was the MOST fun of all. My youngest only 4 1/2 has taken a huge liking to making bread – which is dangerous! I LOVE homemade bread and just want to eat it all up. So we have to limit how often we bake.  We did use the bread for everything from snacks to breakfast and lunch sandwiches. During the winter I find it easier to bake bread – I don’t’ want the oven on in the summer time.
They both have learned more about where things are in the pantry as we went though things together. We will be spending more time incorporating them into our cooking/baking – they did a great job.

~~~~~
So… the challenge is “over”. Well not really. We plan to continue the challenge but more loosely. We want to use what is in our pantry. We have a year supply of many items but now that we eat a good deal of THRIVE foods we don’t need as many traditionally canned vegetables, boxes of mashed potatoes, rice mixes etc. So we plan to use those items up and replace them with THRIVE products.
Did we enjoy the challenge. I did, a lot. Really the ONLY time we went to any store was when we REALLY needed to. Not only did we save money by not buying things but also saved money on gas. I have had the same tank of gas for over a week – which is unheard of with my SUV! I went and did errands today for the first time all year.   I enjoyed taking the month of and living with what we have – which we have figured out is a lot!
Are you ready to take the challenge?  Challenge yourself for these 29 days of February and come back and let us know how you do.
December 25
I am most looking forward to …
2011. It is a new year, a chance to kind of start over. I don't really like resolutions but I will be creating some goals for the new year. I am hoping that with answering these questions each day this month has gotten me into a little routine that I can reflect each day on something and post it to my blog.  The other part of 2011 is that it is the year that I will finally reach my weight goal - at this point I know it will happen!
I am also looking forward to watching the joy on Rebecca & Rachel's faces on Christmas morning.
This is the last day of the challenge... thank you to Log Your Memory for the prompts each day.
A tradition that really means a lot to me is …
The first thing that came to my head is the tradition that we started with our girls which is getting a new pair of pajamas -- as close to matching as we can -- that they open on Christmas Eve. They wear them home from Nana's house and then they have new PJ's that match for Christmas morning.
December 23
It just wouldn’t feel like the holidays without …
Family.
We spend the afternoon with my inlaws and all the rest of the family. This year two cousins are traveling here - one from Louisiana and one from Hong Kong!  We spend the evening playing games and telling the story of the birth of our Savior. We have taken the emphasis of opening presents away and just enjoy the time together with family. My mom is away this year on a trip to Austraulia so it does feel a little odd to not have her around or to have had a celebration with her.
One thing I’d like to do differently this holiday season is …
Take more time to really enjoy the season. Enjoy the girls being home this week and next and do a few fun crafts with them.  At the same time I want to have some me time to get things that I need to get done too!
December 20
I would probably describe the “sounds of the season” as …
Christmas carols. I love to hear choirs sing during this holiday season.
This would be a great place to show this great slide show which has David Archuleta from American Idol singing.
A news headline that caught my attention recently was …
Well I don't read the papers usually, I do listen to news talk on the days I go to work - mainly for the traffic. But one that I heard on the radio last week was about the shooting that happened in a barber shop in Sacramento killing a mother who was strapping in her 2 year old child. One suspect was caught on the grapevine after alert citizens spotted his car.  My heart just hurts thinking about the family of the victims and the poor little child who now does not have a mother.
I went to find the article in case someone wants to read it.
December 18
One year ago …
I was 50+ pounds heavier.
Just wrapping up a back injury.
Just had a tooth pulled.
Working a .7 schedule.
Preparing for Christmas as I am this year.... with a few modifications.
Thinking I was going to do P365 (didn't even get to January 1st!)
... enjoying life {as I am now}
December 17
The best meal I’ve eaten recently was …
chicken with pesto & balsamic sauce from Red Robin (should be a sandwich but since I can't eat the bread I have the stuff on the side).  mmmm.  Has lots of flavor and is different - definetely enjoy that!
Ever since the surgery I just haven't gotten into eating.  I guess that could be a good thing. I just need to work on my habit of grabbing just one of something - one almond, one other kind of nut, one bite of something.  I need to either have a snack or have NOTHING.  Anyway food is not exciting, the chicken that I mentioned above is yummy and I do enjoy that. One breast of chicken (depending on the size they give that night) is 3-4 meals.
Oh... and I am down 49.8 lbs.... oh so close to 50.  This is weight since surgery and doesn't count what was lost prior to surgery!!!
The last thing that really made me giggle was …
I am sure there is something family related that I can think of that was just before this but the last thing that really made me giggle was this post on ScrapMatters:
Dear Santa! ♥ My wish this year is the same as last year - a fat bank account and a slim body. NOT the other way around as you apparently thought last yearblink .....Thanks in advance! ♥♥♥♥♥♥♥♥♥♥♥
December 15
The scents I am most aware of right now are…
Apple Cinnamon and pine.  It must be because I expect to smell these this time of year that when they are just slightly around I can smell them immediately.  It is refreshing to walk into our house and smell a mix of it this time of year!
December 14
Five moments I’d really like to capture through photos this next year are …
*Daily things
*Changes in me
*Rebecca's ever changing smile
*Rachel exploring and learning more
*Our puppy (we don't have one yet...)
December 13
One thing I really wish I could change right now is …
ONE thing... hmm, I guess the cleanliness of our house. It feels so cluttered right now with the holiday boxes out still (and not to mention that the Halloween boxes are still out too).
Of course I could go on about other things but that is the main thing right now that is bugging me!
December 12
I always know the holidays are near when …
Life gets crazy and hectic!  Each year in September I try to do the 12 week count down so that it won't become chaos but I never seem to do it!  This year hasn't been to bad but we cut back on how many gifts each person is getting. My mom will be out of the country so we won't be celebrating with her that day (or during the week for that matter).  I enjoy the pine and apple/cinnamon scents as well so mid November I get those out and it also makes me know the holidays are near.
The last time I saw a movie that I really enjoyed was …
I loved Tangled, it was a great movie. We saw it on Black Friday. I don't see many movies at the theater - hubby goes all the time but I am not a huge sit and just watch tv fan! Then to make the "movie" even better I entered a contest that flashed up when waiting for the movie to start to win an iPad. I got an e-mail yesterday from the credit union sponsoring the contest that I WON!!!!
December 9
Lately most of the reading I’ve done has been …
Magic Tree House, Junie B. Jones and blogs that I usually read on my iPhone blog reader.
I am pretty far behind on my blog reading. It gets out of control pretty quickly. Just 10 days ago I had no posts to read, then it got to 400 and I got it down to less than 200 and I was in the 500's earlier today again!
December 8
The messiest room in my house right now is …
well, most likely it is our bedroom, between my desk and laundry - we have a pretty messy area. The girls have really been working hard at keeping their room and playroom clean. The family room is a mess but it is all contained in the Christmas tubs and the living room got picked up earlier today.  So... guess I know what room I should be working on next!
December 7
My wish list right now includes …
Silhouette cutting machine (although I just got a Cricut in June so probably not something I REALLY need)
More time to do what I want
More time to spend with the girls (doing what I want with them… and them behaving!)
Time alone with Adam (dh) … you know like a date!
Someone to make the arrangements for our trip to SLC (you know airfare, hotel, who is watching the kids while we are gone … etc.)
